Healthy Carrot Cake
For us, working out has become easy. It's a habit, we do it, even though
some days are a struggle. But food... that's where we tend to have the
hardest time. We indulge, then over indulge, then go off the rails! But we've recently found and created some amazing ways to eat something
that taste like it's full of sugar but its super good! This is by far my favourite cake tasting food that's so clean and easy to make!
Makes 1 serving. To make more, multiply the ingredients, and make as many as you need!
Here's the recipe: Pre heat your oven to 350°C Mix the following ingredients in a bowl: - 1 Cup Shredded Carrots - 1/4 Cup Rolled Oats - 3/4 Tsp baking powder - 2 Tsp cinnamon powder - 1/2 Tsp Nutmeg
- 1 Tsp Vanilla extract
- 2 lightly beaten eggs
Option: If you want to sweeten it up, try 1-2 tsp of honey, or stevia sweetener.
Pour the mixture into a greased mini loaf pan
Bake for 20 minutes (check with a toothpick to make sure it's cooked throughout.
