Chocolate Chia Pudding with Homemade Raspberry Jam


If you are craving something sweet, but don't want the extra fat and sugar you've come to the right recipe! This chia seed pudding is healthy and yummy.

Serves: 6 (3/4 cup per serving)

Prep time: 20 min

No cook time

21 Day Fix container equivalents:

  • Pudding - 1/2 yellow

  • Jam - 1 Tbsp is free or 6 Tbsp = 1/2 purple

Ingredients:

  • 2.5 cups unsweetened almond milk

  • 1/2 cup chia seeds

  • 6 Tbsp. unsweetened cocoa powder

  • 2 Tbsp. maple syrup

  • 2 tsp. pure vanilla extract

  • 1 cup frozen or fresh raspberries

  • 1/3 cup water

Directions for Pudding:

  1. Combine almond milk, chia seeds, cocoa powder, maple syrup, and vanilla extract into a large mixing bowl. Whisk vigorously for 2 minutes or until pudding is well blended

  2. Let stand at room temperature for 30 minutes

  3. Mix well

  4. Refigerate, covered, for 4 hours or overnight, stirring occasionally

  5. Divide evenly into 6 servings

  6. Place the jam (see below instructions) on the pudding, serve, and enjoy

Directions for Raspberry Jam:

  1. Combine raspberries and water into a small saucepan

  2. Cook over medium heat, stirring occasionally, for 10 - 12 minutes, or until berries have broken down and liquid becomes slightly thicker

  3. Refrigerate to cool

Tips:

  • I found the recipe to be lacking a bit of the sweetness I was craving. So you can add either a bit more maple syrup, or raw honey to the recipe prior to refrigerating, if needed.

  • The jam can be made with a variety of fruit. Same directions as above, however the amount of water will vary depending on the type of fruit. Add more water if the sauce pan gets too dry.

  • The jam is fantastic on toast or as fruit dip.
